You have to go to: Settings > Calendars >

I just found that this exists because @Danny said so in a comment in https://morgen.canny.io/feature-requests/p/set-default-reminders
When editing individual task/event reminders, if they're equal to the defaults, the disabled
Restore defaults
button could be replaced by an Edit defaults
button. This would let users know that there are defaults and that they can be changed, without compromising on screen real estate.Z

OMG. I just stumbled on this because I was going to report it as a bug / deficiency. I thought Morgen did not have any way to change the 10 minute default. Consequently, I've been juggling notifications between Apple Calendar (relying on it for custom notifications) and Morgen (getting annoyed that it can't change the default).
Please move this to the general preferences page. I don't like having to set default reminders for EACH calendar. That was a pain. It should be a default for all calendars (I just had to go through about 7 or 8 calendars, changing them all to a default of 5 min + a "day before" for all-day events). Annoying.

I want to update my notifications so that I get them 5 minutes before an event instead of 30 minutes before an event.

You can either set default reminders for all events in a specific calendar (*1), or set non-default reminders for specific events in the edit floating dialog. With either of those you will be able to update how many minutes before the start of an event a reminder will fire. Also, you can add more than one reminder, in case you need it.
